My 10 Favorite Recipes

1. Hamburger Stroganoff

Ingredients:

  • 1lb hamburger
  • 1 medium onion
  • 1/2 cup butter
  • 2 TBLS four
  • 1 tsp salt
  • 1 tsp garlic salt
  • 1/4 tsp pepper
  • 8 oz mushrooms
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 2 cups cooked noodles
  • snipped parsley

Instructions:

Brown hamburger, onion, and butter. Add flour, salts, pepper and mushrooms.  Stir in soup, simmer uncovered 10 mins.  Stir in sour cream.  Serve over noodles, sprinkle with parsley.

 

2. Mexican Chicken

Ingredients:

  • 1 large chicken, cooked and chopped
  • 2 TBLS butter
  • 1 medium onion
  • 1 can Ro-tel tomatoes
  • 1 can green chilies
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 dozen corn or flour tortillas
  • 1 lb cheddar cheese
  • salt and pepper to taste

Instructions:

Saute onion and butter.  Add Ro-tel tomatoes, chilies, soups, and chicken.  Alternate layers of tortillas, soup mixture and cheese in 9x13 pan.  Bake at 350 for 30 mins or until bubbly hot and cheese is melted.

 

3. Monster Cookies

Ingredients:

  • 3 eggs
  • 1 cup 1 TBLS brown sugar
  • 1 cup sugar
  • 3/4 tsp vanilla
  • 3/4 tsp karo or syrup
  • 2 tsp baking soda
  • 1/2 cup butter
  • 1 1/2 cup peanut butter
  • 4 1/2 cups oatmeal
  • 1/2 cup chocolate chips
  • 1/2 cup plain M&M's

Instructions:

Mix all ingredients and drop by tablespoons on ungreased cookie sheet for 12 mins at 350 degrees.

 

4. Jalapeno Popper Spread

Ingredients:

  • 2- 8oz pkgs. cream cheese, softened
  • 1 cup mayo
  • 4 oz can chopped green chilies, drained
  • 2 oz canned diced jalapeno peppers, drained
  • 1 cup grated parmesan cheese

Instructions:

Stir together all ingredients until smooth.  Add cheese on top.  Bake 375 degrees for 30 mins or microwave for 3 mins. 

 

5. Lasagna

Ingredients:

  • 12 oz cottage cheese
  • 2 cups shredded mozzarella cheese
  • 2 eggs
  • 1/3 cup chopped parsley
  • 1 tsp onion powder
  • 1/2 tsp dried basil leaves
  • 1/8 tsp pepper
  • 32 oz jar spaghetti sauce (I prefer Prego, fresh mushroom brand)
  • 1 lb cooked ground beef, drained
  • 9 uncooked lasagne noodles
  • 1/4 cup water
  • grated parmesan cheese

Instructions:

In large bowl, mix first 7 ingredients and set aside.

In skillet mix spaghetti sauce with cooked hamburger

In 9x13 pan spread 3/4 cup meat sauce, layer 3 uncooked noodles on top of meat.  Spread 1/2 of cottage cheese mix and 1 1/2 cup meat sauce.  Layer 3 more uncooked noodles on top of meat sauce.  Spread remaining cottage cheese mixture.  Top with 3 uncooked noodles and then remaining meat sauce.  Pour water around edges and cover tightly with foil.

Bake at 375 for 45 mins.  Uncover foil and bake 15 mins more.  Let stand for 10 mins before serving.  Serve with parmesan cheese.

 

6. Chicken and Broccoli Braid

Ingredients:

  • 2 cups cooked chicken, chopped
  • 1 cup fresh broccoli, chopped
  • 1/2 cup red bell pepper, chopped
  • 1 tsp garlic powder
  • 1 cup sharp cheddar cheese, grated
  • 1/2 cup mayo
  • 1 tsp. dried dill weed
  • 1/4 tsp salt

Mix above ingredients together

  • 2 pkgs (8oz each) crescent french rolls
  • 1 egg white, lightly beaten
  • 2 TBSP slivered almonds.

Instructions:

Grease a cookie sheet and open french rolls dough.  Slice them in half length wise and divide mixture between the two french rolls.  Take dough and fold over so the dough closes and you cannot see the mixture.  Take the 2 french rolls and braid them or criss cross.  Coat the dough with the egg white and top with almonds.  Bake at 375 for 25-28 mins.

 

7. Spicy Crab Salad

Ingredients:

  • 8oz cream cheese softened
  • 1 cup mayo
  • 1 cup chili sauce or 2 TBSP Sirache
  • 2 large packages crabmeat chunks or flakes
  • 6 green onions
  • 2 habanero peppers
  • 1 red or yellow bell pepper

Instructions:

Mix all ingredients and chill in fridge for 2 hours before serving.  Serve with crackers, wheat thins, etc.

 

8. Tomato Pie (My favorite side dish)

Ingredients:

  • 4 medium tomatoes - peeled, sliced, drained on paper towel, salted and peppered
  • 10 fresh basil leaves
  • 1/2 cup green onion, chopped
  • black pepper
  • 1 deep dish pie crust
  • 1 cup mozzarella cheese
  • 1 cup cheddar cheese
  • 1 cup mayo

Ingredients:

Mix cheeses and mayo and set aside.  Place crust in pie pan and add sliced tomatoes to first layer, add basil, onion, and pepper.  Continue to layer.  Add cheese and mayo mix on top.  Bake at 350 for 30 mins.

 

9. Chicken Tetrazzini

Ingredients:

  • 2 cups cooked chicken or turkey, chopped
  • 5 TBSP butter
  • 1 can cream of mushroom soup
  • 1 can mushroom bits and pieces
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 8 oz box of angel hair spaghetti, cooked and drained.
  • 2 cans chicken broth
  • 1/2 cup flour
  • 1 cup cheddar cheese
  • 1/2 pound Velveeta cheese

Instructions:

Melt butter in large skillet, add flour, mixing constantly, add salt and pepper with flour.  Once blended add broth, stir until no lumps.  Cook over medium heat.  Add mushroom soup and cheese.  Once cheese starts to melt turn stove off.  Add mushrooms, chicken and cooked spaghetti.  Stir until mixed.  Place mixture in greased 9x13 pan at 350 degrees for 1 hour or until brown or bubbly.

 

10. Breakfast Squares

Ingredients:

  • 2 cans crescent rolls
  • 1 pkg. mild sausage
  • 1 pkg. 8 oz cream cheese
  • 1 bag 8 oz cheddar cheese

Instructions:

Brown sausage, remove from pan, but do not drain grease.  Using same pan, melt cream cheese, keep stirring then add sausage back to the pan.

In a greased 9x13 pan put 1 pkg. crescent rolls down, add sausage and cream cheese mixture, then add cheddar cheese, place 2nd package of crescent rolls on top.  Bake at 350 for 20 mins.  Cool for 5 mins before cutting.
